Overview
Honō Japanese BBQ is now hiring Meat Cutters/ Slicers to join our kitchen team.
We are a Japanese BBQ restaurant specializing in all-you-can-eat yakiniku, Wagyu beef, premium grilled meats, sushi, and izakaya-style small plates. This role focuses on preparing meat for grill service, including slicing, trimming, portioning, marinating, and arranging cuts for presentation.
Meat Slicer/ Meat Cutter at Honō are responsible for maintaining consistency, food safety, portion control, and quality across a variety of beef, pork, chicken, and seafood items. This role is ideal for someone with strong knife skills, meat slicer experience, and attention to detail.
Responsibilities
- Slice, trim, portion, and prepare meats according to restaurant standards
- Operate a commercial meat slicer safely and properly
- Prepare yakiniku-style meat cuts for service, including beef, pork, chicken, and other proteins
- Follow portion standards to maintain consistency and control food cost
- Marinate, season, label, and store meats according to food safety guidelines
- Arrange meats neatly for service and presentation
- Maintain cleanliness and sanitation of slicers, cutting boards, knives, and prep areas
- Monitor prep levels and communicate low-stock items to management
- Assist with service prep and restocking during busy shifts
- Follow proper storage, rotation, labeling, and temperature control procedures
Skills
- Previous meat cutting, butcher, or protein prep experience preferred
- Experience using a commercial meat slicer preferred
- Strong knife skills and attention to portion consistency
- Ability to work safely with sharp equipment and raw proteins
- Knowledge of food safety, sanitation, labeling, and storage procedures
- Ability to work cleanly, quickly, and accurately under pressure
- Strong attention to detail and presentation
- Must be punctual, reliable, organized, and able to stand for long periods
Pay: $18.00 per hour
