Overview

Honō Japanese BBQ is now hiring Meat Cutters/ Slicers to join our kitchen team.

We are a Japanese BBQ restaurant specializing in all-you-can-eat yakiniku, Wagyu beef, premium grilled meats, sushi, and izakaya-style small plates. This role focuses on preparing meat for grill service, including slicing, trimming, portioning, marinating, and arranging cuts for presentation.

Meat Slicer/ Meat Cutter at Honō are responsible for maintaining consistency, food safety, portion control, and quality across a variety of beef, pork, chicken, and seafood items. This role is ideal for someone with strong knife skills, meat slicer experience, and attention to detail.

Responsibilities

  • Slice, trim, portion, and prepare meats according to restaurant standards
  • Operate a commercial meat slicer safely and properly
  • Prepare yakiniku-style meat cuts for service, including beef, pork, chicken, and other proteins
  • Follow portion standards to maintain consistency and control food cost
  • Marinate, season, label, and store meats according to food safety guidelines
  • Arrange meats neatly for service and presentation
  • Maintain cleanliness and sanitation of slicers, cutting boards, knives, and prep areas
  • Monitor prep levels and communicate low-stock items to management
  • Assist with service prep and restocking during busy shifts
  • Follow proper storage, rotation, labeling, and temperature control procedures

Skills

  • Previous meat cutting, butcher, or protein prep experience preferred
  • Experience using a commercial meat slicer preferred
  • Strong knife skills and attention to portion consistency
  • Ability to work safely with sharp equipment and raw proteins
  • Knowledge of food safety, sanitation, labeling, and storage procedures
  • Ability to work cleanly, quickly, and accurately under pressure
  • Strong attention to detail and presentation
  • Must be punctual, reliable, organized, and able to stand for long periods

Pay: $18.00 per hour
