About us
Dylan’s Cottage Bakery & Delicatessen has been a fixture on the Long Beach Peninsula for years. We bake a wide variety from scratch daily. Our customers are a mix of locals who’ve been coming in for years and visitors who plan a stop with us on their trip to the coast.
The role
We’re hiring an experienced baker to share overnight production. This isn’t an assistant or trainee position.
On a given shift you’d be responsible (with a team) for some or all of:
- Cake and yeast-raised donuts, fritters, and bars, including our signature items
- Cinnamon rolls and other sweet rolls
- Croissants, puff dough, and other laminated pastries
- Cakes and cheesecakes
- Cookies, brownies, and bar desserts
- Muffins and quick breads
- Breads and rolls for both retail sale and for the deli
- Production for catering orders on top of the daily retail case
You’d be mixing, proofing, frying, baking, finishing, and glazing, and keeping the case stocked and consistent so the morning team can open on time.
What we’re looking for
- Scratch baking experience, ideally 2+ years in a production bakery, café, or restaurant
- Ability to work overnight hours with reliability.
- The ability to produce a wide range of products in one shift and hold quality and consistency across all of them
- Speed without sloppiness. Our summer volume is high and the work must be both fast and high quality
- Food handler’s card (or willingness to get one before starting)
Bread experience is especially valued for this role. Lamination and donut experience are also strong pluses. If you have some of these but not others, still apply and tell us what you know.
The honest version of the job
This is overnight work. Hours are roughly in the pre-dawn window, and you’ll be on your feet, in a warm kitchen, moving the whole shift. Summer on the Peninsula is our busiest stretch, and the production list grows with it. We’re telling you this upfront because the people who do well here already know they like this work. We’d rather you start with a clear picture than be surprised in week two. We run real production volume, not a small-batch case.

Pay: $18.00 – $25.00 per hour
